Brian Ko, one of the young owners of The Piggery
shared his passion in food business. Brian’s love for food and
seasonal cooking started at a very young age thanks to the influence of his mother
who taught him of some cooking secrets. After an initial career in banking, Brian
switched gears to focus on putting up a food business in partnership with his 'foodophile' friends.
Admittedly, no formal course or a degree on culinary, he honed the
knowledge and talent in cooking by researching and training himself on the progressive
areas of food and restaurant management. Brian and his business partners opened the
kitchen of The Piggery in November 2015. The Piggery has stayed its commitment
to the celebration of pork. It only sources local whole pasture and free range piglets.
At The Piggery, you will see a lot of 'porky' selections in the menu. Don't be surprised, expect carbs and fats on
your ordered food. To be honest, the menu breakdown has a wide range of items
and, yes, the main ingredient is pork. The Piggery represents desire for you to
see the impossible idea in pork fusion happened in a dish.
“It’s all Comfort Pork Food, and yes, you are healthy about your lifestyle, but
there is also a place to go where you can sometimes cheat to satisfy your
cravings and tolerate food temptations, ito yun, The Piggery. Para din ito sa
mga tao na hindi masyadong health conscious, Naglalaro kami sa premise na
masarap ang bawal, Bawal man, eh masarap pa rin.” Ko relates.
Owners of this food stall are committed to bring friendly dining ambiance
not just for their customers but also in the environment. They make use of
recycled boxes and paper plates that are easy to dispose. It is also evident in
the over-all industrial design of the food stall structure that is made of reclaimed
wood and recycled roofing.
The Piggery offers simple, pork-inspired menu with
fresh, local ingredients at a great peso value. This open area dining concept,
the owners personally bring the comfort food to your table thus delivering a
memorable overall dining experience. Fads come and go in the restaurant
business but The Piggery’s style of food will endure the test of time. It’s
